Ice Cream Cake, Spatchcock Chicken and OutDoor Cooking

So.....I know it has been a while! I was starting to go through withdrawl ......I never realized how addicted I am to the internet and all my food porn!


The last couple of things I have made and documented are Ice Cream Cake, Spatchcock Chicken and roasted fingerling potatoes. I apologize for the quality of the pictures.....I need to buy a camera, so these are taken on my phone.

Ice Cream Cake



I made this cake for my youngest sons B-day. He wanted a DQ ice cream cake but I refuse to buy one....so I improvised and made one. I will make it different next time....more like a baked alaska. I had planned on this but I forgot my mixer in PEI! So plan B.......I made a brownie base, added the ice cream to an inverted bowl and froze it. I then put the brownie on top of the ice cream. The crust is chocolate. Pure chocolate. However, I made the layer too thick to it was a pain to cut the cake. Tasted great though!


Outdoor Cooking

The next thing I made was at the camp......cooked outside on my "stone oven" Syd made it for me last year and it has been great! The spatchcock chicken and potatoes turned out great!

Spatchcock, which means removing the backbone of a chicken and flattening it out, is an old Irish term.

The chicken was simply rubbed with a cajun spice rub and marinated for hours. Then I cooked it in the oven and brushed some brandy BBQ sauce on it. The potatoes are done with herbs, garlic and oil.
