Good Times with my Sister....

So yesterday was my Birthday. My sister came to visit me. I did not realize how much I needed her visit.

It all started with a stroll up Water Street looking for a place to have supper. We stopped into this little shop to take a peek around and this is what we saw.

Toadally Fitness -Yoga Toads! They cracked us up. I am not sure if they were lawn ornaments or something to put on your mantel! But they were funny.

Then we went to the "Gables" for supper. What a gorgeous view! Right on the water.

We had jalapeno slammers, nachos, a lobster club sandwich and this chocolate beauty for dessert! Delish! Unfortunately I only remembered to take a picture of the dessert! lol

And of course after a couple of beer we needed to visit the ladies room before heading out. Jennifer is taller than me plus she had heels on....so this picture really got us giggling.

However, this one sent us into LOUD Laughter! Almost crying laughing. It was so funny.....well to us.....not to the other ladies in the loo! Oh well! : )

Then we decided to sit down by the beach and have a beer......and a cigar! I had stopped at the grocery store for pain pills and that is why they are in the picture.....we were NOT taking pills and drinking! lol They are merely there for laughs!

Someone looks a little sketchy eh? Maybe like she didn't want to be recognized!?

We laughed so hard over many silly things.....but it was exactly what we both needed!
Love ya Jenn!

Dinner at "The Landing"

This is the back to the hotel. In the bottom left corner you will see a green door....that is the employee entrance. The Landing is on the second floor and the kitchen on the third. The piece in the middle....is where the rooftop garden is. It is nice, I imagine once the gardeners get to work it will be beautiful! And the view is amazing. I will try to get up there soon to take a picture. I kind of wanted to wait until the flowers were all ready.

The Landing is our staff cafeteria. Not sure why it is called the landing.....it really makes no sense to me! lol

This is Brett posing for the camera! Jazz hands and all! lol The Landing is only open for lunch from 11-2 and supper from 5-10. Brett has been looking after the evening Landing. I have done the lunch one a few times....it is a lot of piddly stuff though! lol

And this is the seating area! Nice eh?! Did you notice the windows with the great view? No? Really? Hmmmm....funny about that eh! lol

And here is what I had for supper. Fish and sweet potato fries! Yummy! The fish is ok. Not as good as down at the Red Herring but better than most places I have had it! And the fries are perfect with a little mayo!
Maybe I will try to get some pictures of lunch at the Landing! Exciting stuff I tell you!

Its funny how the body works.....

So......many of you know that I am a vegetarian. I do eat salmon and some seafood. But in the last 7 years I have NEVER craved steak. Or even wanted a steak....let alone medium rare! But last night I did......and I gave into it. I figure that if I wanted it that bad then it must be something my body needed. And man it was GOOD!

The steak is a cap steak so it was pretty tender.....and cooked simple, just dusted with good old S & P!

The peppers were added near the end of cooking so they stayed crisp. And the fingerling potatoes were drizzled with white truffle oil. Delicious!! So good that I almost want another! lol

Fish and Chips

Ok, so I LOVE fish and chips! I am always trying to find the best place to go. On Sunday, after unpacking in St Andrews, we decided to go for lunch.

Here is a picture of the place we choose. I was not very confident going in.......

But.......Look at this......

This place had to be the best I have ever had! The fish had a great crispy, fairly thick batter. Very nice. And the pitcher of Clancy's seem to be really good too! I might have to go back to double check that though! lol

Ice Cream Cake, Spatchcock Chicken and OutDoor Cooking

So.....I know it has been a while! I was starting to go through withdrawl ......I never realized how addicted I am to the internet and all my food porn!

The last couple of things I have made and documented are Ice Cream Cake, Spatchcock Chicken and roasted fingerling potatoes. I apologize for the quality of the pictures.....I need to buy a camera, so these are taken on my phone.

Ice Cream Cake

I made this cake for my youngest sons B-day. He wanted a DQ ice cream cake but I refuse to buy one....so I improvised and made one. I will make it different next time....more like a baked alaska. I had planned on this but I forgot my mixer in PEI! So plan B.......I made a brownie base, added the ice cream to an inverted bowl and froze it. I then put the brownie on top of the ice cream. The crust is chocolate. Pure chocolate. However, I made the layer too thick to it was a pain to cut the cake. Tasted great though!

Outdoor Cooking

The next thing I made was at the camp......cooked outside on my "stone oven" Syd made it for me last year and it has been great! The spatchcock chicken and potatoes turned out great!

Spatchcock, which means removing the backbone of a chicken and flattening it out, is an old Irish term.

The chicken was simply rubbed with a cajun spice rub and marinated for hours. Then I cooked it in the oven and brushed some brandy BBQ sauce on it. The potatoes are done with herbs, garlic and oil.
